Elderberry Rosehip Medicinal Jelly

While experimenting with elderberry syrup recipes, I inadvertently used an ingredient both high in vitamin C and pectin - which turned my syrup into a jelly! This was a delicious sweet pick-me-up during the cold and flu season this year. Hope you enjoy it as much as I did!


  • 1 1/2 cup dried elderberries, organic
  • 1/2 cup dried rosehips, organic
  • 4 cups water
  • optional: 1-2 sticks of cinnamon, pinch of clove powder, a few pieces of frsh or dried ginger
  • 3/4 cup honey, preferably raw and local
  • 1/2 fresh lemon for a squeeze of lemon juice


  1. Combine elderberries, rosehips, water and your chosen additives (I used all) into a pot and bring to a boil.
  2. Lower to a simmer and reduce to 1/2 volume  - which will take about 45 minutes. 
  3. Cool for a little while, strain and pour into a glass container. 
  4. Stir in the honey until evenly dispersed. 
  5. Add squeeze of fresh lemon juice to mixture. 
  6. Let sit. Once it cools comp;etely, it will solidify into a jelly.
  7. Cap and voila, you have your medicinal jelly for cold/flu season! 
  8. Store in fridge for up to two weeks.
